WHere is a simplified version of a drink featured on a new cocktail list. Designed as a large-volume prepared mix which is packed full of tastes of a festive period, which makes it excellent for hosting a festive gathering. Any leftover cordial for morning drinks, desserts, or to make another batch of this cocktail.

The Bikini Cocktail

Makes enough for 10 people

For the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

For the Cocktail (makes 850ml, to serve 10)

400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Directions

For the Cordial: Put all the components into a pot, heat until it reaches a gentle boil, stirring to dissolve. Then, take off the heat and leave to cool down entirely. Transfer into an clean bottle, seal keeping it in the fridge, it will last for about one month.

For the Premix: Mix every spirits and syrup into a large bottle, allow it to infuse for 60 minutes, then filter it best through a fine cloth, so it's fully clarified.

For serving: Pour 85ml of your cocktail base into your mixing glass containing ice, gently stirring gently for one minute to cool it down. Filter to a cold coupe glass or equivalent, decorate with a few cranberries and complete it using a brief mist with the mandarin essence above the glass.
